A few of our delicious lunch dishes for October

Italian Chicken & Butterbean Stew

Onions and garlic cooked in extra virgin olive oil with red, orange and yellow peppers until they are soft and sweet. Courgettes are added and cubed chicken breast along with soft butterbeans. The stew is then simmered until the sauce is super tasty and rich, this is served at lunch time with fresh green vegetables and Cous Cous.

Chicken & Coconut Curry

This is a very yummy, curry made with cubed chicken breast, garlic, ginger, a blend of spices, spinach, green beans, coconut cream and tomatoes. It has a really lovely flavour, rich sauce and is served with fresh vegetables and rice.

Tomato, Courgette & Lentil Soup

This is a very hearty soup for the children! It is full of courgettes, amazing quality Italian sieved tomatoes and red lentils. Starting with a base of onions and garlic, gently cooked in olive oil, then the courgettes are added, red lentils and simmered until everything is tender before being blitzed. This is served with a wholemeal roll and vegetables.

Vegetarian Chilli

This vegetarian chilli has a fantastic smokey flavour courtesy of some chilli and sweet smoked paprika, it is also jam packed with fresh peppers, courgettes and celery as well as red kidney beans and organic soya mince. It is served with rice and green vegetables.
